Simple & Creamy Sliced Cucumbers
This creamy sliced cucumbers recipe is an easy side dish with summer meals. perfect way to enjoy your cucumber harvest!
Late summer gardens are often overflowing with cucumbers this time of year. Yes, you can make all different kinds of pickles if your family likes them. But my family is a little “meh” with pickles, so I find other recipes to use our harvest. This recipe for Simple & Creamy Sliced Cucumbers is a family favorite; hope you enjoy it, too!
Simple & Creamy Sliced Cucumbers

Ingredients:
1/2 cup sour cream
1 Tb sugar
1 Tb lemon juice
1 tsp salt
dash pepper
2 large cucumbers, seeded & sliced (or the equivalent small cucumbers with seeds)
1/2 a red onion, sliced thin
1+ Tb sesame seeds (or Everything Bagel seasoning)
Directions:
- Combine sour cream, sugar, lemon juice, salt and pepper in bowl; stir to mix.
- Slice cucumbers and onion and place in serving bowl.
- Pour creamy mixture over cucumbers. (optional-chill)
- Before serving, sprinkle sesame seeds on top. Or Everything Bagel seasoning.
I usually make a double recipe of the cream, so there’s plenty. You can always add more cucumber slices. The mixture will get more runny when the water in the cucumbers sits awhile. If you chill before serving, the cucumbers will soften.
We love this with a summer meal of grilled meat and fresh corn on the cob.
