My sister-in-law first started making this dip. She loved it with old fashioned Ritz crackers. I’ve learned to enjoy it paired with the new cheese crisps that are available. As a keto option, it is great with veggies. Make it to go with your next grilled meat meal this summer!
Dill Cucumber Dip
This creamy, delicious dip is perfect when the garden cucumbers are plenty. Serve with crispy crackers or vegetables as an appetizer or as a satisfying snack.
Ingredients
- 1 package cream cheese, softened
- 2 full size cucumbers, or equivalent small ones
- 1 cup mayonnaise
- 1 Tablespoon fresh lemon juice
- 1/2 teaspoon dill
- 1/2 teaspoon hot pepper sauce
Instructions
- Peel cucumbers ( I like to stripe them for interest). Take seeds out with tip of spoon.
- Chop cucumbers into small pieces.
- Beat softened cream cheese with mixer until smooth.
- Add mayonnaise, lemon juice, dill weed and hot sauce of choice ( I used siracha, but Franks or tabasco work, too). Mix until smooth.
- Fold in cucumbers.
- Chill for 2 hours before serving.
- Serve with crackers or veggies. (Very good with the cheese crisps that are available right now)
