Fresh & Crunchy Tuna Shoestring Salad

Fresh & Crunchy Tuna Shoestring Salad

We love eating this main dish salad in the summertime, but it can be enjoyed anytime of year. Most of the ingredients I usually have on hand, if I just remember to grab the shoestring potatoes. It can be a great picnic option, or to bring to a potluck, too. You can mix the shoestrings into the whole salad, or serve them alongside, so people can put their own on.
If you’ve got garden radishes, you can add them too. I love munching on a pickle with this salad. Could be served with lettuce leaves also.

Ingredients
- 2- 12 oz cans tuna fish
- 1 cup grated carrots (can use store bought version, which would be crunchier)
- 1 cup chopped celery
- 1/3 cup chopped red onion
- 3 hard boiled eggs, chopped
- chopped radishes-optional
- shoestring potatoes
Dressing:
- 1 cup mayonnaise
- 2 Tb prepared mustard
- 2 Tb lemon juice
- 1/2 teaspoon celery seed
- 1 teaspoon dill-fresh or dried
- dash sugar
- salt & pepper to taste
Directions
Combine tuna, carrots, celery, eggs, onion, and radishes in a large bowl and mix with spoon. In a separate small bowl, stir together mayo, mustard, lemon juice, and spices. Pour over and mix to combine. Chill for several hours. To serve, place salad on shoestring potatoes. If bringing to a potluck, mix shoestrings in right before serving so they don’t get too soggy.
