This appetizer recipe is so easy-it only has 4 ingredients! If you know how to grate cheese and whisk eggs, you can whip it together in no time! And oh, that melty, delicious cheese is so good!

Ingredients
16 ounces Monterey Jack Cheese (block)
16 ounces Medium Cheese (block)
1- 4 ounce can diced, green chilis
6 eggs, slightly beaten
Directions
Preheat oven to 350 degrees. Grate all of the cheese and combine in large bowl. (Block cheese will melt better than already shredded cheese; packaged shredded cheese contains an ingredient to keep it from getting clumped-celluose) Place half of combined shredded cheese in a 9 x 13 pan. Spread diced green chilis over top. Add rest of cheese.
Pour over beaten eggs. Bake 45 minutes. Let cool slightly and cut into squares to serve.

The green chilis give the melty cheese just the right amount of flavor. We love to make these with a whole buffet of appetizers for the holidays. They’re also perfect to pair with chili or tacos-even taco salad. And now that we’re all avoiding carbs-they’re totally keto friendly!
