I remember her making this easy make-ahead dessert during the holidays. Top with whipping cream or ice cream; the perfect pairing to the tart cranberries. Cranberry Cake with Butter Sauce

If you love the combination of tart and sweet, this cake is for you! The sweet butter sauce is the perfect pairing to the tart cranberries. Serve with extra sauce so guests can smother their piece if they like. Top off with real whipped cream or ice cream.
Cranberry Cake
This moist cake is perfect for Holiday gatherings, served with whipped cream or ice cream.
Ingredients
- 2 eggs beaten
- 1 cup granulated white sugar
- 1 cup sour cream
- 1 teaspoon vanilla
- 1 3/4 cup flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- pinch of salt
- 2 cups dry whole cranberries (can use frozen if fresh cranberries aren't available)
- Butter Sauce:
- 1 1/2 cup granulated white sugar
- 1 cup half and half
- 2 Tablespoons butter
- 1 teaspoon vanilla
Instructions
- Preheat oven to 350 degrees.
- Grease 9 x 13 pan.
- Mix together eggs, sugar, sour cream and vanilla.
- Sift together flour, baking powder, soda and salt.
- Add dry ingredients to wet.
- Fold in cranberries.
- Pour into greased pan.
- Bake 30-35 minutes until golden brown on top.
- Make butter sauce while cake is baking.
- Melt butter in saucepan on medium-low. Add sugar, half and half, and vanilla. Heat and stir until boiling for 1 minute. Let cool to warm before serving over cake.
- Serve with real whipped cream or ice cream.

it says make-ahead, can you elaborate on that?
Just meaning it’s not a dessert that you have to put together right when you’re eating it. You can bake it earlier and have it sitting on the counter until you’re ready to serve it.

If I want to make this for a potluck, can I just pour the butter sauce over the whole cake? Also would it need to be refrigerated?
If you’re making it for a potluck, I think I’d just serve the butter sauce in a pitcher next to it, so people can put it on their slice as they serve it. I’d have a bowl of real whipped cream available, too. Yum! Enjoy:)

I find it odd that your recipe does not have any butter or oil in the cake portion of the recipe! The cake still turns out? I am looking to make this for Christmas and just want to make sure it will turn out like I remember…Thanks!
I think there’s enough with the sour cream and the eggs, Loretta. And it is a dense cake. Make it ahead of time once if you want to try it out; it’s easy!
